BAOBAB PEANUT BUTTER CHOC CHIP COOKIES

  • 1/4 cup unsalted butter, melted

  • 1/4 cup peanut butter

  • 1 cup brown sugar

  • 1 teaspoon vanilla extract

  • 1 egg

  • 1 tablespoon raw honey

  • 1-1/4 cup all-purpose flour

  • 1 tablespoon Arewa Baobab fruit powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon fine sea salt

  • 1/2 cup semisweet chocolate chips

  • 1/4 cup crushed unsalted almonds

  • 1/4 cup dried goji berries

Directions

  • Preheat oven to 375°F.

  • Cream the unsalted butter, peanut butter, and brown sugar until smooth. Beat in the vanilla extract, egg and raw honey. Mix in the flour, Arewa Baobab fruit powder, baking soda, and salt. Fold in the chocolate chips, crushed unsalted almonds and dried goji berries.

  • Using an ice-cream scoop, add cookie dough balls onto a baking sheet covered with parchment paper. Flatten the dough balls slightly using the palm of your hand. Add a few extra chocolate chips, crushed unsatled almonds and dried goji berries to top up each dough ball.

  • Bake for about10 to 12 minutes or until the edges are golden brown. Remove from oven and allow cookies to cool for 1 minute on the cookie sheet before transferring to a wire rack to cool completely. Enjoy!
